Cinnamon Butterhorns

I can’t believe that in the same month I have been moaning about the grey and miserable bank holiday, and basking in glorious sunshine, this weather is crazy! My weekend was appropriately filled with BBQ’s and ice creams, and a mammoth baking sesh.

Marshmallow fluff update

A quick update on my homemade marshmallow fluff. It has started doing something a little odd…… it’s separating. Apparently it just can’t hold all that golden syrup and it’s collecting in the bottom of the jar. It still tastes good, but I don’t think it’s supposed to be doing this. Perhaps I didn’t beat it for long enough, or golden syrup is just a bit too heavy-duty for the feathery lightness of fluff, who knows? But I think I’ll take my sister’s advice next time, and buy it from Ocado.

Very chocolatey chocolate cake

I have had a song going round my head for literally days, I blame the teenage girls I work with. I’m sure when I say “Hey! I just met you and this is crazy” you’ll know what I’m talking about. But the line that really bothers me goes like this:

“Before you came into my life I missed you so bad”

It makes no sense! You can’t miss something before you’ve ever had it. And it’s just bad grammar, it should be “I missed you so badly” but I suppose that wouldn’t have sounded as good in the song.

Anyway, on to baking. This week, my cake was not as good as I had hoped it would be. I’m not sure I can blame anything for it, it just didn’t really work. It still tastes pretty good though! It was supposed to be a two-layered, square cake, but mine turned into a single layered round cake.

Whoopie Pies with Homemade Marshmallow Fluff!

It wasn’t that long ago that I had my first Whoopie Pie from the Hummingbird Bakery in South Kensington, I don’t know how I’ve come this far without trying them. A cake sandwich with fluffy frosting filling, they are just so good!

I had been eyeing up the whoopie pie recipes in Cake Days for a while, but was feeling a little cautious about attempting them for a number of reasons. Firstly, at the bottom of the ingredients list is something I know you won’t have in your cupboard – Marshmallow Fluff. Secondly, they take a fair amount of time with all the chilling, baking, more chilling and cooling. And thirdly, the ones from the shop are just so perfect I didn’t know if I could do them justice. But, I found myself with a Saturday morning to spare and I was feeling bold. They also happen to be one of Jake’s favourites and he starts a new job on Monday so I thought I might treat him (as if he doesn’t get plenty of baked treats from me?!).

I think I need another try at them, mine look very home-made! Smoother batter, bigger but flatter mounds on the baking tray, and not quite as long in the oven and they’ll be getting there!

Everyone’s baking!

It’s been a bumper weekend for baking! I’m not sure if I’ve personally inspired people to bake or if it’s just the best thing to be doing on such a grey May Bank Holiday, but still, more baking!

Jake and I went to the water polo at the London Prepares Series (for those of you not in the UK it’s a whole load of events to test out the Olympic venues in the run up to 2012, the park is awesome!) and we came home from a long day of watching women being dunked under water, shopping and GBK to Jake’s flatmate’s home made Madeleines with home made lemon curd! They didn’t all fit on our baking trays, so she made some like cupcakes, which worked really well. Piping the lemon curd into them is especially fun, as it starts emerging out of the raspberry.
