Dairy Free lemon curd and strawberry cake

So recently I found out that my tummy can’t really take dairy, my tummy told me this. Without going into too much detail, butter, milk, cream, cheese and custard make my tummy hurt. Which is really unfortunate as that is pretty much a list of my favourite foods, not to mention the main ingredients in most cakes and desserts. All is not lost though for Cakey Kate! There are dairy free alternatives to pretty much everything I need to bake….. cue “Pure” sunflower spread. Completely dairy free and a really good replacement for butter in baking; the finished cake tastes just as good as a buttery one, you’d never know it wasn’t the real deal. An added bonus is it’s perfect for an “all-in-one” sponge cake like this one. The method consists of “put ingredients in mixer, turn on.” Simples.

Chocolate Cupcake Marathon

This week is my last week working at Benenden School 😦 I’ll be sad to leave and will really miss all the girls there. So as a sort of goodbye and thank you for the year, I made cupcakes for all the girls in the houses I’ve worked in.

Cream Tea

It was our birthday on Saturday (we being me and my twin). It felt a bit wrong to make myself a birthday cake, so I made scones instead. They are really quite easy to make and very satisfying. Don’t be afraid of over kneading the dough, you want to make it nice and smooth. I used an 8cm round cutter, to make proper big scones!  Be careful not to twist the cutter when you bring it up from the dough as this can cause part of the scone not to rise.

Obviously, enjoy these with strawberry jam, clotted cream and a nice cup of tea.
